4 whole wheat uncut pitas
2 TBS olive oil
1 roma tomato diced
6 leaves of fresh basil, chiffonade
1 cup freshly grated mozzarella cheese
Freshly grated parmesan to garnish
Brush pitas with olive oil. Equally divide cheese and spread on the pita. Layer on tomato and basil. Preheat oven to 400F and place pita pizzas on a quarter sheet baking pan. Bake until cheese melts and pita is golden brown, about 10-12 minutes. Garnish with parmesan. Enjoy!
I work and go to school part-time so I need a quick and easy go-to recipe that can be made in a flash. My husband and son love these yummy little pizzas. They're also good for you. They are so versatile too. Layer on as many veggies as you like or replace the olive oil with red gravy. You decide! I usually serve these with a quick green salad.
